Folic Acid
Folic acid has been found to reduce the tendency to build up of atherosclerosis. It seems to reduce levels of an amino acid called homocysteine which should only exist briefly in the body before being converted to the harmless cystathione. This process is dependent on another amino acid called methionine, and the B vitamins including folic acid, B12 ansd B6. Methionine is found in brazil nuts, sunflower seeds and sesame seeds and animal proteins. Many people cut out nuts and seeds from their diet under the impression they are simply high in calories and fat, but they are essential sources of many good fats, minerals and vitamins.
